Under the trees by the Hurunui Council offices on SH1, you will find the Amberley Farmers Market in the heart of Amberley, from 9am every Saturday morning. Stop on your travels through North Canterbury and sample baking, sweet treats, coffee and locally made food-to-go. With a wide range of meat, vegetables, eggs, bread, baking, hot food, nuts, oils, honey and other fresh quality produce from local farms and growers this is an authentic farmers’ market where you can make a quick stop for supplies, enjoy savoury/sweet treats, or take your time with a leisurely social shop.

What does this have to do with the Farmers Market you may well ask...Well, its a recipe, named after priests in their eggplant-purple robes fainted with pleasure after eating these flavour-infused baked eggplants.
Use eggplant, tomatoes, onion & garlic from #Grown, lemon from #Flashbacks, oil from #MtGreyOlives. There's currants in there too.
It was delicious hot, & needs #RachelScott bread to soak up the juices. Served cold the following day topped with #LittleFarmGoatDairy lightly salted chevre was even better!!
